I love Thai recipes and this one will make your mouth water and leave you craving it again. We have a restaurant in Atlanta called Everybody’s, but it’s nowhere near my house. When I get the chance I always order their Thai Chicken Pizza Salad. I decided to recreate my version of it at home when Fleischmann’s Yeast asked me to share with you my idea for a gourmet pizza. You might be saying salad on a pizza? Is she crazy? No, it’s amazing and wait till I share my BBQ Salad Pizza soon!
It’s got lots of rich flavors and textures, roasted garlic, creamy ricotta, crisp spring mix salad and cucumbers. The roasted chicken makes it the perfect all in one meal.
I made my favorite easy pizza dough recipe with Fleischmann’s Yeast. At Halloween, I made a great spider pizza with it for the kids.
Instead of using a traditional sauce I used ricotta mixed with a honey roasted garlic. First check out my tutorial How to Roast Garlic the Easy Way, then take 2 heads of the roasted garlic in a bowl and mix in 1 tablespoon of honey. You can add a little more if you want it sweeter. The honey roasted garlic get’s blended in with the ricotta and spread on the pizza crust.
Then I layered onto my Thai pizza roasted red peppers and some sliced rotisserie chicken. You can also roast chicken breasts or use some leftover chicken sitting in your refrigerator. I pulled it out of the oven and prepared a spring salad mix with diced cucumber, tomatoes, red onion, and a few peanuts which give a great crunch.
The dressing was made using a bottled vinaigrette dressing mixed with a peanut dipping sauce. Then I drizzled it all over the top. The Thai flavor is amazing in this gourmet chicken pizza and it I can’t wait to make it again. Here take a closer look at all that goodness just waiting for you.
