It’s the time of year when we are all getting to be in a rush for spending time with family, attending parties, and finding that perfect gift. I love to make this cake for friends, especially my friend Pete. I met Pete and his wife Cristina not long after I was married and we have walked a million miles together as friends. Pete is in the Navy Reserves. In 2007, Pete served a 12-month tour in Afghanistan and once a month leaves his family for a weekend stint at a local base.pete

In 2010, his wife asked Pete if he minded her donating one of her kidneys to my husband. Pete willingly agreed as they are both about serving others and saved my husband’s life. Pete homeschools his children, works part time and this year is supporting his wife through breast cancer while still remaining in the Navy reserves. Pete always has a smile and gives everyone the true selfless support we have all grown to love. We often don’t think about how much our servicemen and women have going on in their personal lives while they give you and I this gift of selfless service.

Ingredient List
  • 1 box yellow cake mix
  • 1 large egg
  • 1 stick softened butter
  • 8 ounces softened cream cheese
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1/4 cup softened butter
  • 1 pound powdered sugar
  • 1 cup semi sweet chocolate chips
  • 1 cup Heath Bar pieces
Directions
  1. Preheat oven to 325 degrees
  2. Mix together cake mix, one egg and 1 stick of softened butter.
  3. Pat down into a 9x13 greased baking pan to make it like a flat crust
  4. In a mixer beat cream cheese until smooth.
  5. Add vanilla and eggs and beat again until blended.
  6. Add 1/4 cup softened butter and blend just until incorporated.
  7. Slowly add in powdered sugar on low speed and mix until incorporated do not over mix it.
  8. Stir in chocolate chips and toffee pieces and pour over cake mix crust.
  9. Bake for 35-45 minutes until lightly browned.
