Pumpkin cake cookies with maple pecan glaze are the perfect sweet treat for fall!
Here’s the pumpkin cake cookies recipe. Enjoy!
- 1 Box Pillsbury Pumpkin Cake Mix
- 1/2 cup softened unsalted butter
- 1 tablespoon flour
- 2 eggs
- ¾ cup powdered sugar
- 2 T brown sugar
- ¼ cup unsalted butter melted
- 4 T pure maple syrup
- 1/2 T Vanilla
- 1/2 cup crushed pecans
- Mix together the ingredients for the cookies, then take a tablespoon of the dough and roll it into a ball. Place dough on a silicone baking mat or parchment lined cookie sheet so they don’t stick.
- Bake at 350 degrees for 10-15 minutes, depending on your oven.
- Take out and let cool for 5 minutes, then transfer to a baker's rack that is over a sheet of parchment paper. (trust me you will thank me for that tip later)
- Once the cookies are cooled, mix together all the ingredients for the Maple syrup icing.
- Spoon the icing over the cookies. All the drips will land on the parchment paper so clean up is easy! Once the glaze has set, you can put them into a box or container.
These pumpkin cake cookies with maple pecan glaze are so yummy, and the make a perfect gift. I took them to a few friends and none of them could believe they were made from a cake mix!
