You probably get tired of reading, “Hi, I'm Rachel, and I'm the author and creator over at {i love} my disorganized life“. Believe me, I get it. But, let's face it, I only come around once a month, so it's easy to forget me. Don't worry, I won't hold it against you.

Now that the intro is out of that way, can I just say that this is a really special week for me? Not only am I attending my very first out of state conference, but I'm here in Atlanta with Miss Information! 

Cool, right? Plus, Saturday is my birthday! I'm turning 45, so before I forget, be sure to stop by my place and enter my birthday giveaway.

Now for the fun part. S'more pudding! OK, not just any s'more pudding, I made homemade Nutella S'more Pudding Cups.

 I'm kind of a sucker for sweets, it's summer {s'mores, heelloo!} and who doesn't love Nutella? However, they can be rather messy, so, it only made sense to put them in a cup.

By using 5-oz plastic cups & spoons, I killed two birds with one stone: a) pudding can be rich, so it's just the right amount, which means no waste and b) no cleanup, just toss the cups!

Of course, adults may want a ‘real' fork, and that's OK, too.

Nutella S'more Pudding Cups
Homemade Nutella pudding layered with a crunchy graham cracker crust makes up these Nutella S'more Pudding Cups.

Ingredient List
Pudding
  • 16 - 5 oz plastic cups
  • 1/2 C sugar
  • 1/4 C cornstarch
  • 1/4 tsp salt
  • 2 Tbsp butter
  • 3 C milk {you can also substitute almond milk}
  • 2/3 C Nutella
Graham cracker crust
  • 16 graham cracker squares {8 full sheets}
  • 1 Tbsp + 1 tsp sugar
  • 2 Tbsp butter melted
Directions
Pudding
  1. In a large saucepan, combine sugar, corn starch and salt
  2. Over medium heat, stir in milk and butter gradually; stir constantly until boiling
  3. Boil 1 minute, stirring constantly
  4. Remove from heat and stir in Nutella until well blended
  5. Set aside to cool slightly while making crust
Graham cracker crust
  1. Place graham crackers in a bag, crush until almost fine {I used my rolling pin}
  2. In a small bowl, combine cracker crumbs, sugar and melted butter
  3. Stir until crumbs are moist
Assembly
  1. Put 1 Tbsp of crust in each cup, pressing down lightly
  2. Top crust layer with 1 Tbsp pudding
  3. Repeat layer of crust using 2 Tbsp this time
  4. Repeat pudding layer using 2 Tbsp pudding
  5. Wrap each cup with plastic wrap; set in fridge to chill
  6. Top with mini marshmallows and serve
