You probably get tired of reading, “Hi, I’m Rachel, and I’m the author and creator over at {i love} my disorganized life“. Believe me, I get it. But, let’s face it, I only come around once a month, so it’s easy to forget me. Don’t worry, I won’t hold it against you.
Now that the intro is out of that way, can I just say that this is a really special week for me? Not only am I attending my very first out of state conference, but I’m here in Atlanta with Miss Information!

Now for the fun part. S’more pudding! OK, not just any s’more pudding, I made homemade Nutella S’more Pudding Cups.
I’m kind of a sucker for sweets, it’s summer {s’mores, heelloo!} and who doesn’t love Nutella? However, they can be rather messy, so, it only made sense to put them in a cup.
By using 5-oz plastic cups & spoons, I killed two birds with one stone: a) pudding can be rich, so it’s just the right amount, which means no waste and b) no cleanup, just toss the cups!
Of course, adults may want a ‘real’ fork, and that’s OK, too.
- 16 - 5 oz plastic cups
- 1/2 C sugar
- 1/4 C cornstarch
- 1/4 tsp salt
- 2 Tbsp butter
- 3 C milk {you can also substitute almond milk}
- 2/3 C Nutella
- 16 graham cracker squares {8 full sheets}
- 1 Tbsp + 1 tsp sugar
- 2 Tbsp butter melted
- In a large saucepan, combine sugar, corn starch and salt
- Over medium heat, stir in milk and butter gradually; stir constantly until boiling
- Boil 1 minute, stirring constantly
- Remove from heat and stir in Nutella until well blended
- Set aside to cool slightly while making crust
- Place graham crackers in a bag, crush until almost fine {I used my rolling pin}
- In a small bowl, combine cracker crumbs, sugar and melted butter
- Stir until crumbs are moist
- Put 1 Tbsp of crust in each cup, pressing down lightly
- Top crust layer with 1 Tbsp pudding
- Repeat layer of crust using 2 Tbsp this time
- Repeat pudding layer using 2 Tbsp pudding
- Wrap each cup with plastic wrap; set in fridge to chill
- Top with mini marshmallows and serve
