Hi there! Rachel from {i love} my disorganized life back to share a treat with you, easy ice cream sandwiches.
Now, I know it’s been a while, but I can explain. I’ve taken a temporary job and have been working loads of hours. I’ve also been getting home pretty late, so thankfully Mr. Disorganized has been taking care of dinner. And, sadly to say, it’s left me with little time to do what I really love, which is blogging.
It’s so true what they say, “You don’t know what you’ve got til it’s gone”. Overly dramatic? OK, my blog isn’t exactly gone, but I sure have a lot less time to spend on it than I’d like. The good news is, by mid April I’ll be back at it in full force with a renewed love and appreciation for it!
In the mean time, while I may not have the energy {or the time} to do a lot of baking or cooking right now, I am able to make these ice cream sandwiches. They are so easy, it’s silly. And, to be honest, sometimes I don’t want my ice cream in a bowl, sometimes I want it in a sandwich.
They’re a perfect little treat, not too big, and not too small.
Now, I’ll admit, they would be much more fun with sprinkles, because let’s face it, sprinkles are like bacon, they really do make everything better! But, when you’re tired and just want to shove the sandwich in your face, sprinkles can wait.
- 1 Box Nabisco Famous Chocolate Wafer Cookies
- 1 Carton French Vanilla ice cream
- With a medium-sized ice cream scoop, scoop ice cream onto the flat side of a wafer cookie
- Use your fingers to gently flatten the ice cream, being careful not to break the cookie
- Top with a second cookie
- Repeat until all cookies are used, or you have as many as you like
You will have some ice cream left over
