Upgrade Boxed Tacos

Today is my 43rd 29th birthday again! 
 
My hubby gave me the best gift ever a light box for me to take my pics with for my blog. So nice to have a supportive hubby! He earned major brownie points for that one. My favorite food is Mexican and we are going out tonight with some friends but in honor of my great hubby and Mexican food I thought I would share his spicy tacos and seriously we can eat 5 each when we make these! They totally Rock!
 
 

OK so usually I do a great step by step tutorial but my hubby was cooking and I was drinking a corona so this is the only pic you get sorry!
Hubby's nickname is Chef No-tellin, Because he can open up the fridge and there is no tellin what he will come out with but it's always good.

Now there is nothing better than a good ol nasty(in a good way) Old El Paso in a box taco night. We like the flat bottom taco shells that stand up and we use the Old El Passo low sodium taco mix.

Ingredients:

  • Box of Taco Shells
  • Taco Seasoning Packet
  • Ground Meat ( we use beef or chicken)
  • Diced sweet or white onion
  • Bell Pepper any color will do
  • 1 Diced Jalapeno
  • 1 Chipotle in adobo (you can add more if you want it hotter)
  • Salsa
  • 1 Beer

Brown your ground meat then add in your onion, bell pepper and jalapeno and saute till soft but but not to soft. Put in your diced Chipotle and at least 1/2 a beer and drink the other half while you saute. Then toss in the taco seasoning packet and about 3 tbsp. of salsa and stir in good, let it saute a bit and let the beer cook down.
Heat your shells in the oven.

When we put our tacos together we use the following topping

  • Pico De Gallo or diced tomato
  • Mexican Blend Cheese
  • Sour Cream
  • Shredded Lettuce

Ok I am not going to insult your intelligence and tell you how to put it all together in the shell I think you can figure that part out, if you cant comment below and I will help you.

    Thanks for idea of onion and red pepper. Also, seasoned ground turkey with kosher salt, cracked pepper, chili powder, cumin, garlic powder. Instead of using the full packet of taco seasoning I used a 1/4 of the seasoning with 2/3 water.
