Baby Red Potato Salad

We’ve been experiencing the the warm days of summer – even if summer isn’t officially here yet….
it will be 90° on Sunday in Illinois :(((
In our household we love any kind of potato salad,
but in periods of high heat we prefer salads that are light on the mayonnaise.
Being the mustard girl that I am, I came up with this so yummy and easy salad.
Great for the hot days ahead.

Baby Red Potato Salad

What you’ll need: 4 cups baby red potatoes, chopped small (about 2 pds) 3 scallions diced 1/4 cup finely diced red onion 1 stalk celery, diced 1 tsp. Dijon mustard 1 tbsp. EVOO 1 tbsp. light mayonnaise (or regular) 1 tbsp. red wine vinegar Salt and Pepper to taste Chop potatoes, onions and celery. Boil potatoes in lightly salted water until soft, approx 10 minutes. Drain and let cool (about 1/2 hour in refrigerator). While the potatoes are boiling, combine red onion, scallion, celery, mustard, olive oil, vinegar and mayonnaise. Season with salt and pepper. Mix well and while potatoes are cooking then cooling let the flavors marinade. Once the potatoes are done and cool, mix into the bowl and add scallions and additional salt and pepper to taste. Serve room temperature or refrigerate until ready to serve.
