My kids will eat PB&J almost every day. It’s their favorite. We pre-make and freeze sandwiches so busy school mornings are much easier. I wanted to make a fun back to school cookie that mimicked these flavors. I left the jelly off of this batch of my peanut butter sandwich cookies but you can have it either way.
