Does it feel like winter just won’t end?  Yeah, I hear ya!  My son has already had numerous snow days, and we’ve just dug out from a pretty big snowfall.  Unfortunately, March is our biggest snowfall month here in Northern Virginia, so we’re likely to get more of the white stuff in the upcoming weeks.  With that in mind, I’ve made sure to restock with Bailey’s Irish Cream for this rich, creamy Irish Cream Hot Chocolate!

If you’ve never made homemade hot chocolate, you’re missing out. Not only is it much, much better than the powdered mix stuff and it’s pretty easy to make. I love mixing up cocoa recipes and making them different every time.

This grown-up hot chocolate is perfect on a cold night! Creamy, rich and wonderfully comforting, this drink will be your new favorite!You can make hot chocolate with your preference of milk. However, I would really recommend whole milk.  It adds such a nice rich, creaminess to the hot chocolate and when the chocolate melts, creates a velvety delicious drink.  I love making homemade hot chocolate, especially on cold, snowy days or nights when you just want to warm up.

Irish cream is a fun, delicious liquor to keep on hand.  It’s great for drinks and cocktails, but amazing on top of ice cream or a fun addition to a grown-up dessert.This grown-up hot chocolate is perfect on a cold night! Here’s my easy, delicious recipe for Irish Cream Hot Chocolate:

Irish Cream Hot Chocolate
This grown-up hot chocolate is perfect on a cold night! Creamy, rich and wonderfully comforting, this drink will be your new favorite!

Ingredient List
  • 3 c. whole milk
  • 2/3 c. semi-sweet chocolate chips
  • 1/4 c. sugar
  • pinch/grind of salt
  • 1/2 tsp. vanilla
  • 3-5 oz. Irish Cream 1 - 1.5 oz. per cup
  • Optional Toppings:
  • whipped cream
  • chocolate shavings
Directions
  1. In a medium saucepan, add the milk, chocolate chips, sugar and salt. Heat on medium low heat, frequently whisking. Continue whisking until the chocolate melts completely, and the mixture comes to a low simmer. (Do NOT let boil, as it will burn to the bottom of the pan.) Once the liquid comes to a low simmer, promptly remove from heat. Add the vanilla and stir to combine.
  2. To mugs or glasses, add the Irish Cream, and ladle in the hot chocolate. Top with whipped cream and chocolate shavings if desired.
