Shrimp Po Boy’s

shrimp-po-boysMy hubby and I love NOLA (that's New Orleans Louisiana for those of you not from the south)
Hubby's favorite place is ACME Oyster House. He took me there and I began my love affair with the Po Boy. So for Lent Hubby and I decided to try it! It was awesome!So first, take 1 lb. shrimp and marinate it in beer and hot sauce (use a lot more than you think)
Then you coat it in 1 1/2 cups each flour and corn meal with salt, pepper and cyan to taste

Then you heat your oil and fry those babies!

Mean while toast some french bread and spread some melted butter on it. Oh try not to steal one of those shrimp.
 
Put some tomato and shredded lettuce on one half
 
And Mayo on the other (side note hubby says you have to use mayo on both sides I just don't roll that way)
 
Then you take your fried shrimp and layer them on the side with the mayo, don't be afraid girl layer that on thick!
 
This is the finale and it is great! you will love it. Hubby puts bread and butter pickles on his, me not a big fan of pickles
so I skipped them.

I hope you enjoy and remember it is Lent, God will be smiling with you as you eat it! In case you are wondering the Lenten tradition of fish on Fridays is a matter of sacrifice and penance.
