Every year after Thanksgiving we always seem to make ourselves a glorious dinner, and there is always enough to feed double, which inevitably results in copious amounts of leftovers. In all honesty, I really enjoy the leftovers. You can make so much with all the great dishes, and the turkey is certainly no exception – in fact its my favorite leftover of all! With a few other ingredients you can make this amazing Turkey Bacon & Guacamole Sandwich.
It’s such a fantastic way to use leftover holiday turkey.
This sandwich with all of its amazing ingredients is absolutely heavenly! I utilized Russian Rye bread, but you can use whatever bread you prefer. Make sure its firm and sturdy as this sandwich has some heft to it. I toasted the bread in the toaster oven with a large slice of provolone cheese. You can also put it under the broiler – just long enough to toast the bread and melt the cheese. Keep an eye on it – it will toast quickly.
From there I built my sandwich with some thick slices of roasted turkey breast (leftovers from my Thanksgiving turkey), and then topped that with some thick slices of bacon. I added a few slices of Roma tomatoes, and added some fresh arugula for a nice peppery flavor. I then spread on some chunky and zesty guacamole to the top slice of the bread.
As you can see, this sandwich will stack up to the most fierce appetite. Not only is it totally satisfying, the flavors can’t be beat. The turkey and bacon are perfect partners, and the guacamole adds a nice amount of zesty flavor. The cheese brings a slight sharpness, and the veggies lend to a nice texture.
