
When I eat a regular side salad I usually read for Ranch or Blue cheese but they are heavy and loaded with calories. This is my go to dressing especially in the summer but it’s also great for a light meal in the fall or winter especially when it’s cold and I need a reminder of warmer times. Simply put all the ingredients in a container and whisk or shake to blend. That’s it!

Place your meat in a zip-top bag and pour the homemade lemon dijon dressing over the meat. Only let it marinate for about 20-30 minutes because citrus will start to cook the meat like it does in ceviche. I usually serve marinated lemon dijon chicken with brown rice or tossed into a salad made with arugula and tomatoes. Then I use more of the dressing on the salad. It’s so crisp and refreshing with the light lemon taste and a slight kick from the spicy dijon mustard. It not only tastes great but you will feel good eating it.
Most homemade dressing recipes will store in the fridge for at least a week. You will just want to shake or stir it first if it sits for a while.
- 8 tablespoons olive oil
- 6 teaspoons of the lemon juice
- 4 Tablespoon of Dijon Mustard
- 2 teaspoon salt
- 1/2 pinch freshly ground black pepper
- Put all the ingredients in a container and whisk or shake to blend.
