Bushwacker Cocktail: Coconut, Kahlua, Rum and Ice Cream

Today I am making you a Bushwacker to celebrate my friend Megan’s Birthday,  A bunch of us are participating in a virtual birthday party. That’s my kind of party no cleaning and lots of yummy treats.

It's a virtual Birthday Party!



I first met Megan through Online Blogcon, an online bloggers conference, since then we have helped each other with our blogs. She has inspired me to eat healthier and a few weeks ago we swapped recipes. I co-hosted the Old Fashioned Recipe Swap  and we swapped Tropical Pork Roast and  Mushroom and Goat Cheese Stuffed Chicken with Easy Pan Sauce. 

Every girl needs a good cocktail and even though Megan was crazy enough to give up sugar for summer I am sure she will make an exception for her birthday! After all I am an enabler when it comes to good food or a good cocktail. 


A Bushwacker is like a milkshake with an undertone of chocolate. It is so yummy and perfect for summer!

Here’s the recipe:
1 cup of ice
1 cup of Vanilla Ice Cream
4 oz Cream of Coconut
2 oz Kahlua
2 oz Bacardi Rum
2 oz Cream de Cocoa
4 oz 1/2 and 1/2
Chocolate Syrup

Put everything but the chocolate syrup in a blender and blend till smooth, it you want it thicker add more ice cream. Put in a glass (I rimmed mine with cream of coconut and fresh coconut) drizzle the top with chocolate syrup and enjoy!
