A Healthy Quick Breakfast on School Mornings

Our solution to a quick healthy breakfast
OK let it be known I am NOT a morning person. In high school my father would rather leave me sticky note messages on my bathroom mirror than talk to me and get snapped at. I have become more tolerant with age but don’t talk to me till I’ve started my first cup of coffee!

Here begins the struggle with getting a healthy breakfast for my kids. I am bad at falling on those prepackaged triangle breakfast pastries and mini chocolate chip muffins for my kids in the morning so we can sleep as much as we can. Don’t judge, I never claimed to be June Cleaver. G-mans Dr. told us on his last yearly check up we needed to bulk him up at breakfast because he was not gaining enough weight. The medicine he takes for his ADD squashes his appetite, especially at lunch time. See the problem coming? Cranky mommy has to cook a weekend breakfast on the weekday. As usual I knew there had to be an easier way and I found it. Our solution has been these!

Served with a side of sausage that I precook on the weekend and re-heat in the microwave it provides a healthy breakfast quick. 

They taste just as good as mine and with every batch made from scratch I know he is getting something he likes and something Ican be sure of. Theseare made with REAL ingredients I use inmy own kitchen, milk, eggs and flour. Don’t believe me check out his video, I just love all the little spatulas lined up, wish I could flip that many at one time!

Now given the choice G-man would rather have these or Aunt Jemima’s Waffles than anything else. He has gained some weight and the Doc is happy. Matthew of course is my sugar-aholic so he loves his “Pan-ah-cakes”, as he pronounces them, with a topping of chocolate chips. My personal fave is bananas and pecans!
