As we say goodbye to 2015 and usher in a new year, its only appropriate to have a glass of bubbly in hand. This Pomegranate Prosecco is the perfect cocktail to ring in the New Year. Made with just a few ingredients, its easy to prepare for a holiday party, and looks absolutely beautiful!
Not only is this a wonderful cocktail for a holiday or New Years party, its fantastic to enjoy for brunch. Much like a mimosa, this drink includes a sparkling wine (Prosecco), and a fruit juice (pomegranate juice). For a bit of beautiful color and whimsy, I’ve also added some magenta pomegranate seeds. Once you add the sparkling wine, the seeds dance around in the drink – which may be what you’ll be doing after a few of these! 😉
This cocktail couldn’t be easier to make. To your champagne glasses, add some pomegranate seeds. I added about 10-12 seeds per glass, but add however many you would prefer. Next, pour in some pomegranate juice – about 2 Tbsp. Lastly, pour in your Prosecco.
These cocktails are not only simple, they are so pretty! The pomegranate juice adds a gorgeous pink color to the prosecco and the dark magenta pomegranate seeds dress up the drink even more. Your guests will be so impressed!
Here is the easy recipe for this dangerously delicious cocktail:
- 1 bottle of Prosecco sparkling wine your preference
- Pomegranate juice
- Pomegranate seeds
- In four champagne glasses, add about 10-12 pomegranate seeds. Top the seeds with about 2 Tbsp. pomegranate juice. Lastly, fill the glasses with Prosecco. Enjoy!
As we close out 2014, lets take a moment to reflect on all of our blessings that the year brought us. It’s easy to get blogged down with disappointments, or shortcomings we may have faced, but even in these situations, we’ve likely learned something valuable or were able to gain a greater appreciation for what we have. I know I am tremendously grateful for all that 2014 brought to me; good, bad and everything in between. As we ring in 2015 lets set our sights on appreciating all the greatness that life will bring, raise our glasses, and toast the wonderful possibilities that are about to transpire! Cheers, everyone! ~Erin
