Do you love caprese salads in the summer, made with fresh basil? I do. They are so fresh and light and perfect with anything I grill. I decided to make a caprese sandwich for lunch with some left over mozzarella from one of our pizza nights.Melty cheese, fresh tomatoes and warm toasted bread. You must try it!
This sandwich was so good I could have eaten more than one! This Caprese Sandwich is just 5 ingredients:
- Butter
- Bread (I used Publix whole grain deli bread)
- Fresh Mozzarella cheese
- Roma Tomato Slices
- Fresh Basil
Layer the cheese, tomato, and basil on the bread. Put your pan on the stove on LOW heat (if you don’t the cheese won’t melt) Put a bit of butter in the pan and when it’s melted lay the sandwich on the butter and then cover it with a lid from another pan.
This creates a little oven to help the cheese melt easier. Check it and then when the bread is toasty brown lift the sandwich up with a spatula and throw some more butter in the pan and flip the sandwich. Cover again with the lid. Once it’s done take out and enjoy! You can throw some balsamic vinegar on it after it’s cooked to make it even more like a caprese sandwich.
