Pumpkin Cake Cookies, with Maple Pecan Icing

Ingredient List

Pumpkin Cake Cookies:

  • 1 Box Pillsbury Pumpkin Cake Mix
  • 1/2 cup softened unsalted butter
  • 1 tablespoon flour
  • 2 eggs

Maple Syrup Icing:

  • ¾ cup powdered sugar
  • 2 T brown sugar
  • ¼ cup unsalted butter melted
  • 4 T pure maple syrup
  • 1/2 T Vanilla
  • 1/2 cup crushed pecans


  1. Mix together the ingredients for the cookies, then take a tablespoon of the dough and roll it into a ball. Place dough on a silicone baking mat or parchment lined cookie sheet so they don’t stick.
  2. Bake at 350 degrees for 10-15 minutes, depending on your oven.
  3. Take out and let cool for 5 minutes, then transfer to a baker's rack that is over a sheet of parchment paper. (trust me you will thank me for that tip later)
  4. Once the cookies are cooled, mix together all the ingredients for the Maple syrup icing.
  5. Spoon the icing over the cookies. All the drips will land on the parchment paper so clean up is easy! Once the glaze has set, you can put them into a box or container.
