Heat oven to 350 degrees.
Spread coconut on a sheet pan and place in oven for about 5-7 minutes. Watch it carefully so it does not burn. Remove and set aside to cool.
Cream together in a mixer the cream cheese and dulce de leche until fully blended.
Spread onto 20 Nilla Wafer cookies and top with remaining cookies to make little sandwiches.
Roll the edges of each sandwich cookie in the coconut and place on a parchment covered baking sheet.
Melt your candy wafers one color at a time and spoon each color into a sandwich zip top bag.
Snip a tiny corner off one bag at a time and drizzle over the sandwiches. Don't snip the second bag until you are ready to use it or the melted candy coating will ooze out.
Let sit or refrigerate for 5 minutes for the candy coating to harden.
