Black Bean and Mango Salad Recipe

Ingredient List

  • 1 cup chopped ripe mango
  • 3/4 cup rinsed and drained black beans
  • 1/4 cup diced red onion
  • 1 medium cucumber peeled and diced
  • 1-2 seeded diced jalapenos optional
  • 2 tbs. cilantro
  • 1/2 tsp. salt
  • 4 tbs. orange juice
  • juice of one lime
  • chips for serving


  1. Stir together all ingredients and serve as a side salad, over chicken or with tortilla chips as a dip.
