Tomato Basil Tart with Fresh Herbs

Ingredient List

  • Non-Stick Cooking Spray
  • 1 Pie Crust I used Pillsbury Refrigerated Pie Crust Room Temp
  • 3 Tbs. Butter
  • 4 Medium Tomatoes diced
  • 3 Green Onions
  • 2 Tbs. Fresh Basil
  • 1 Tsp. Salt
  • 1/4 Tsp. Pepper
  • 8 oz. Swiss Cheese Shredded
  • 3 Eggs
  • 1 C. 1/2 and 1/2


  1. Pre-heat your oven to 400 degrees
  2. Spray a 10 1/2 inch tart pan or pie dish with non-stick cooking spray or spray olive oil.
  3. Place your room temp pie crust into the dish and press into the sides.
  4. Bake Crust for 5 minutes then prick the bottom with a fork and bake for 5 minutes more.
  5. Remove from oven and turn up oven to 425 degrees.
  6. Melt butter in a skillet over medium heat, add tomatoes, green onion, fresh basil, salt and pepper.
  7. Saute for 10 minutes or until it's reduced by 1/2.
  8. Drain off any excess liquid using a colander if you wish.
  9. sprinkle cheese over the bottom of the crust then spread the tomato mixture over the cheese.
  10. Whisk the eggs and 1/2 and 1/2 together.
  11. Pour over the mixture.
  12. Bake at 425 degrees for 10 minutes.
  13. Reduce oven temp to 375 degrees and bake for another 30-35 minutes.
  14. Let stand for 10 minutes before cutting.
