Preheat the oven to 375 degrees
Cook the Potatoes
Peel potatoes and cut into 2" pieces.
Place in a pot and cover with cold water
Cook on medium heat until they are fork tender.
Strain and put into a mixing bowl with butter and heavy cream and whisk till fluffy and creamy
Mix the wasabi powder and a few drops of water and make into a paste.
Add 1/4-1/2 of the mixture and blend in, taste, then add more to your liking.
Cook the Salmon
Heat a saute pan over medium to high heat and add 2 tsp of oil to the pan
Add a pinch of salt and pepper to the salmon then add to the pan
cook on each side for 3-4 minutes or until golden brown - set aside to rest
Roast the Baby Bok Choy
Tear off each rib of Bok Choy individually and place into a large bowl.
Add 1 tbsp oil to the bowl and salt and pepper to taste
Place Bok Choy on a baking sheet and roast for 4-5 minutes or until it is limp and beginning to brown around the edges.
Plate the Dish
Place part of your mashed potatoes in the middle of the plate
Top the potatoes with the roasted Bok Choy
Place the salmon on top and spoon 1 1/2 tablespoons Sambal over the top
Garnish with Cilantro
