Black Bean Avocado Salad

Ingredient List

  • 1-2 heads of Romaine Lettuce
  • 1 Can of Low Sodium Black Beans drained and washed
  • 3/4 of 1 Red Orange, or Yellow Bell Pepper diced
  • 1/4 cup Red Onion Diced
  • 3/4 of a package of grape tomatoes cut in half
  • 3 tablespoons cilantro
  • 1 teaspoon of cumin
  • salt & pepper
  • 3 limes
  • 2 Avocados


  1. Take the romaine leaves roll them up and slice it into thin ribbons like you do basil,
  2. Put the lettuce in a bowl and top with drained and rinsed black beans, bell pepper, onion, and tomatoes.
  3. Dice up the avocado and squeeze the juice of one lime over it, this will keep it from browning too fast.
  4. Take about 3 tablespoons of chopped cilantro, the juice of 2 limes, cumin and S&P to taste and mix in a separate bowl.
  5. Pour the dressing over the salad and toss together
