In a bowl mix together mashed potatoes, sour cream, green onions, bacon, 1 cup of mexican cheese, 1/2 up of panko bread crumbs, salt and pepper.
In a cast iron skillet heat 1 tablespoon olive oil on medium heat.
Sprinkle 1/2 cup of bread crumbs in bottom of pan
Spread your potato mixture evenly in pan and top with remaining cheese.
Cook for 15-20 minutes on your stove top till it's heated through and the center is set. It will start to pull away from the sides of the pan. OR you can put into a 350 degree oven instead of your stove top for the same amount of time.
