When I think of sugar cookies, I think of mixing the dough, letting it chill, rolling it out, and then expertly decorating them for all to ‘oooh’ and ‘ahhhh’ over. And then the realization of what my sugar cookies would actually come out looking like. Um, no thanks. I much prefer an easy recipe for soft sugar cookies.

Give me a cookie that’s easy to mix, bake and decorate. Oh, yes, and it’s got to taste good, too. That’s what I love about these soft sugar cookies. Simply mix the dough, roll in sugar and bake. If you just can’t live without the frosting, then by all means, go ahead.

These soft sugar cookies are perfect for frosting, adding a simple sugar dusting or eating plain.

Ingredient List
  • 2/3 cup shortening
  • 2/3 cup butter softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • Granulated or colored sugar for decoration if desired
Directions
  1. Preheat oven to 350 degrees
  2. In a medium bowl, combine flour, baking powder and salt; set aside
  3. In a large mixing bowl, cream together the shortening, butter and sugars with an electric mixer
  4. Lower speed and add eggs and vanilla, continuing to mix
  5. Add dry mixture, combining until dough comes together
  6. Roll into walnut-sized balls and roll in sugar {do not roll in sugar if frosting cookies}
  7. Place on ungreased cookie sheet 2 inches apart
  8. Bake for 10-12 min, or until bottoms are light brown
  9. Cool on wire racks
  10. Frost, if desired
