Salted Caramel Bark {Holiday Food Gifts}

by Kelley Wilson Filed Under: Christmas, Desserts, Holiday, Recipes 38 Comments

Salted caramel bark is a delicious, easy to make holiday treat. It makes a great holiday food gift, too. Give it as a host or hostess gift, or place it into a pretty jar tied with ribbon for a delicious, homemade food gift!

I love candy bark at Christmas time, but peppermint is not one of my favorite flavors (I know, I know! Don't hate me.) , so I've opted for something a little different, but just as good if not better. Since salted caramel is one of my favorite things in the whole world (and it's super trendy right now too!), I decided to switch it up and make salted caramel bark. It is amazing!Salted caramel bark is better than any candy and it's so easy to make. The perfect holiday treat for giving as a food gift!

Salted caramel bark is one of my most popular holiday recipes – any bark really, but this one especially.

You won't want to quit eating it, and you will have trouble giving it away! But, it really is an amazing holiday gift for teachers, co-workers, and clients. Let's face it if you want to eat it all you can also make my Cranberry Almond Chocolate Biscotti and just keep this for yourself. Everyone makes peppermint bark, so change it up a bit and make something everyone will love! Just be sure to make a big batch, because no one will be able to resist it.

The rich chocolate, chewy caramel and a tang of salt make this Christmas bark recipe a true guilty pleasure, and it's so easy to make in less than 15 minutes. (I won't judge you if you slip some in your coffee or hot cocoa in the morning either. It's just that good!)Salted caramel bark is better than any candy and it's so easy to make. The perfect holiday treat for giving as a food gift!

A TIP FOR MAKING PERFECT SALTED CARAMEL BARK:

When making the salted caramel bark, take a damp sponge and wipe down the cookie sheet before you put the wax paper on it. This way, the wax paper will stick and not move around when you go to spread the chocolate, making the process much easier.

Now, here is the recipe for salted caramel bark:

Ingredient List
  • 1 11.5 oz. package of Ghirardelli Dark Chocolate Chips
  • 1 11.5 oz. package of Ghirardelli Milk Chocolate Chips
  • 1 11 oz. package Kraft Caramel Bits + 2 tbs water
  • Coarse Ground Sea Salt
Directions
  1. Rip off a piece of wax paper and cover a cookie sheet. (see hint below)
  2. In a microwave safe bowl, microwave the caramel bits with 2 tablespoons water for 2 minutes. Then stir and microwave for additional 30 second intervals till fully melted.
  3. Place both packages of chocolate chips in a separate bowl and melt in the microwave or place on the stove with a double boiler and stir until melted and glossy.
  4. Spread the melted chocolate with a spatula on the wax paper, making sure the chocolate goes all the way to the edges.
  5. With a spoon drop dollops of the caramel onto the chocolate.
  6. Take a spatula and swirl it into the chocolate in an up and down motion across the pan creating swirled ribbons.
  7. Sprinkle the salt across the top. Donâ??t be stingy with the salt.
  8. Place your cookie sheet in the freezer for about 15 minutes.
  9. Take it out of the freezer and break the bark into pieces. I turn it over when attached to the wax paper and and hit it with my meat mallet to break it apart.
  10. Pull off of the wax paper and layer in a food safe container with parchment paper and refrigerate till ready to serve.
Recipe Notes

Hint: if you take a damp sponge and wipe it on the cookie sheet before you put the wax paper on it, the wax paper will stick and not move around when you go to spread the chocolate.

What size of pan do you use? Did I miss that?

Just a regular sized cookie sheet that would bake 12 cookies

I don't understand how to use the 2 kinds of chocolate. Am I layering them? Missing them? Two separate batches? Help!

No you mix them together, you just dump them both in one bowl and melt together in the microwave and stir. The dark makes it a little richer tasting without being too bitter.

Have you tried freezing this? I want to make some ahead of time but am wondering if it will have that "wet" look and feel after thawing.

I have not but it will be dewy I'm sure when it thaws. Let me know if you try it and I'll update the recipe!

I made this. Could not find Carmel bits so used regular Kraft carmels. Either way it was 11 ounces of carmel. tastes amazing however the carmel does not break with the bark, causing it to bend. and it i tacky. After reading above, maybe I will try less carmel. Not sure if carmel bits make the difference, I have never seent or used them. Any ideas would be helpful. Thanks

Hey Dina, I did not have that problem with mine it may be the consistency of the regular big caramels the bits are a little more compact and harder. I have found them at Walmart if you have one near you or you might try Amazon. Glad you loved the taste!

I am surprised to say this but apparently I am out of wax paper - makes me very suspicious of a certain 11 year old in my home who loves to use items for building or crafting without asking, haha. So, what are my options? Foil? Parchment paper? A trip to the store (please, no). Thanks! Can't wait to try this one!

Ha Ha that is funny! The wax paper helps it peel off easy so I'm afraid that is the best answer!

Made this last night for my teachers and it was SOOO good! Though, I was wondering if anyone ended up with an especially gooey batch? It seems my caramel never resolidified and it made packaging tricky. Trying again tomorrow for more gifting, so hopefully I'll get it right this time!

I never have had that issue but make sure that you cooled it down in the fridge enough first and keep it refrigerated. Second don\'t go overboard on the caramel or you will have too much and that may make it more difficult. I hope they enjoy it!

The first batch we made I think we put too much caramel on top because it was very hard to break apart. The next two batches we did more of a drizzle instead of spread it and had better results
