We are in back to school mode, and it’s so easy to fall back onto easy morning meals like pre-packaged muffins or frozen pancakes. Kids need protein for a good start. We have to be to school 15 minutes earlier this year and well, we are not exactly morning people in our house. Anything I can do to get them a great breakfast that allows them to eat it at home or on the go in the car on the way to school just takes the stress away.

We’ve all seen breakfast burritos that you can freeze but why not a breakfast sandwich you can pack with anything you or your kids like. I made these frittata breakfast sandwiches with bacon and cheese and tomato slices for the kids. My youngest loves Martin’s Potato Rolls in his lunch box with mayonnaise, cheese, and ham. They make the best little mini sandwiches easy for kids to hold, and I don’t have to hear any whining about cutting the crust off. Yes as hard as I tried not to be one of those crust cutting moms I did give into the pressure eventually.

A frittata is usually made on the stovetop in a pan but taking a cue from my favorite breakfast casserole; I knew it would bake up just fine in the oven. Using a 9×9 baking dish coated with nonstick spray, it’s as easy as mixing up your eggs, your favorite additions, and baking it for 30 minutes. Then just cut the frittata and put it on a pre-sliced Martin’s potato roll and you are ready to go.Make an easy back to school breakfast with this oven baked frittata recipe, made into sandwiches your kids can eat it in the car when your running late and they can be frozen!

Want to have some for another morning? Let the oven baked frittata cool then place them on the rolls. Wrap individually in plastic wrap and place in an airtight container or wrap in tinfoil and put them in the freezer. Ingredient List
  • 9 Sliced Sandwich Martin's Potato Rolls
  • 8 Large Eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded sharp cheddar
  • 1/2 cup bacon pieces
  • Sliced or diced tomatoes
Optional!
  • Sausage
  • Peppers
  • Onions
  • Mushrooms
  • Spinach
  • Pepper Jack or any other cheese you love
Directions
  1. Whisk eggs, salt and pepper together until thoroughly blended.
  2. Add cheese and bacon and stir well.
  3. Pour into a 9x9 pre-greased baking dish
  4. Placed sliced tomatoes on top
  5. Bake 40 minutes or until firm in the middle.
  6. Cut into squares and place on a Martin's Potato Sandwich Roll.
Recipe Notes

To freeze, let the frittata cool before placing on the sandwich roll. Wrap in plastic wrap then place into a tightly sealed container or wrap in foil as well. When ready to eat, remove from container or foil and heat in the microwave for 1-2 minutes. Remove from plastic wrap and eat.
