
This Black bean and mango salad recipe is one you will make over and over again. You won’t be able to get enough of it. A friend gave me this recipe, I tried a scoop and honestly had she left the room I would have absconded with the entire bowl! It’s so fresh with the sweet mango and I was pleasantly surprised at how well the crisp cucumber played so well with the red onions and black beans.
The thing I loved most about this mango salad recipe is its versatility. It’s incredible as a dip with tortilla chips, but I’ve also served it on top of grilled chicken, as a side to grilled flank steak and as a topping on lettuce.
This Black bean and mango salad recipe is really easy to put together and refrigerate for a quick snack.
The jalapenos are optional but if you scrape out the seeds and membranes it cuts down on the heat some and honestly, the mango counteracts it so well you might not mind it. Fresh lime juice is key, I made it once with that fake plastic looking bottle of lime juice because I forgot the lime and it was lost without it.

- 1 cup chopped ripe mango
- 3/4 cup rinsed and drained black beans
- 1/4 cup diced red onion
- 1 medium cucumber peeled and diced
- 1-2 seeded diced jalapenos optional
- 2 tbs. cilantro
- 1/2 tsp. salt
- 4 tbs. orange juice
- juice of one lime
- chips for serving
- Stir together all ingredients and serve as a side salad, over chicken or with tortilla chips as a dip.
