Lemon Cupcakes with a Caramel Drizzle

Today I am joining in with 26 other bloggers to bring you the biggest round up of cupcake recipes! It's cupcake day! Officially cupcake day is December 15th but we are bringing them to you early so you will be ready for it!
 
I am a huge fan of any lemon recipe but these lemon cupcakes are the unreal! They are sweet like a cupcake but have a little bit of tart lemon flavor. The best part is the caramel drizzle on top!
 
My friend Mary is an unbelievable cupcake maker. She does it for fun not for profit. Our children’s school had a fundraiser and we decided to do cupcakes for dessert. These lemon cupcakes were my favorite of the three she made. She was nice enough to share the recipe and I just made 2 slight changes. This recipe has 3 steps and may look like a lot at first but it is really quick and easy so don't worry give it a try.

Want to know how to  keep your cupcakes moist?

You glaze them which seals in the moisture. It really works I didn't ice these until the next day. I covered them in plastic wrap overnight and they were just as moist the next day! These Lemon Cupcakes have a lot of lemon flavor but are light at the same time. They would be perfect for baby showers, wedding showers or any other occasion!
