My family and I LOVE chips and salsa. We eat it as a snack, and pull it out anytime we’re having enchiladas, tacos or fajitas. This Easy Salsa Fresca is an excellent recipe and comes together quickly and easily using fresh, delicious ingredients. It’s the perfect way to top off any Mexican meal!
Salsa Fresca is much like Pico de Gallo, the only difference is this Salsa Fresca has the addition of yellow bell pepper, and red onion. Pico di Gallo is usually just tomato, white onion, and jalapeno. I love both versions of this fresh, delicious salsa, however, I really enjoy the extra crunchy texture that the yellow pepper brings to this Salsa Fresca, along with the peppery flavor of the cilantro.
I really love topping tacos, enchiladas, and fajitas with this colorful salsa. Not only does it add a great, complimentary flavor to the dish, it adds a fantastic texture and crunch. It’s fantastic to have on hand when you want a snack to go with your Corona’s, and makes an awesome dip or appetizer for your Cinco de Mayo party!
Here’s how this Easy Salsa Fresca comes together:
- 3 medium tomatoes diced
- 1/2 medium red onion about 1/2 c., diced
- 1/2 large yellow bell pepper about 1/2 c., diced
- 1 jalapeno diced (optional)
- 1/3 c. cilantro minced
- 2 cloves garlic minced
- 2 Tbsp. white vinegar
- juice of 1 lime
- 1/2 tsp. salt
- In a mixing bowl, stir together the tomatoes, onion, peppers, cilantro and garlic. Add the vinegar, lime juice and salt. Stir together to coat all ingredients.
- Enjoy right away. Refrigerate any leftovers in an airtight container.
As you can see, this salsa recipe is really easy to make. I guarantee this will add wonderful, fresh flavors to your next Mexican meal.
