This Cowboy Spice Mix Steak Rub is my sister and new brother-in-law’s favorite seasoning for steak. I made a big batch of this at Christmastime and all the men in the family got a little jar. This Cowboy Spice Mix has a little sweetness from the brown sugar, a little heat from the chili powder and cayenne pepper, and an interesting twist with ground coffee thrown into the mix.
My husband loves this steak rub too and it’s become a pantry staple for us. When I get low, I make up a big batch and put them into 4oz canning jars (this recipe will yield about 2 cups or about two 4 ounce jars).

This steak rub is really easy to put together just throw it all in a bowl and stir it together. Make sure to crush any chunks of spices out so that it’s well blended. When you are ready to use it pull your steaks out of the fridge and let them sit for about 30 minutes. You NEVER want to grill a cold steak. Letting it sit out will let the juices distribute for a juicer better tasking steak.
Just sprinkle some onto each side of the steak and rub it in with your hand really well. If touching raw meat freaks you out then put on a plastic glove. Just make sure to wash your hands after regardless of how you do it.
- 3/4 cup chili powder
- 1/4 cup ground coffee
- 1/4 cup paprika
- 1/4 cup ground cumin
- 1/4 cup brown sugar
- 2 teaspoons salt
- 2 teaspoons dry mustard
- 2 teaspoons ground coriander
- 2 teaspoons fresh ground black pepper
- 1 teaspoon cayenne pepper
- In a small bowl, combine all the ingredients and whisk gently to combine. Package the mixture in an airtight container until ready to use.
Drizzle 2 tablespoons of olive oil over 1 pound of steak. Rub in 1/4 cup of the spice mixture and marinate 1 hour. Grill to desired doneness.
