Chocolate peppermint cake cookies are a quick and easy Christmas cookie recipe. I love to bake at Christmas (who doesn't?), and these pretty chocolate peppermint cake cookies are the perfect treat to serve at home, or to give as gifts. They are moist and easy to make, using a boxed cake mix. Yes, you heard me right – boxed cake mix! I know it's hard to believe but using the cake mix adds a whole new dimension of texture and flavor. Trust me on this.
The crushed peppermint on top is a festive touch, but if you don't want the crunch, you can use peppermint essential oil (or peppermint extract, but I prefer the essential oil and highly recommend it) instead.This Easy Christmas Cookie Recipe of Peppermint Chocolate Cake Cookies are made with a simple boxed cake mix
I hope you enjoy these chocolate peppermint cake cookies as much as my friends did. One of them even said, “These were so good I only let the kids have one, then I hid them and then I had one every night with coffee.” Now, I'm not saying you should hide them from the kids…but I wouldn't blame you! These are just festive enough for a kid's class party, but impressive enough for coffee with the girls or the PTA holiday get together.

One More Thing…

Adding the ooey, gooey icing can get a little messy. Here is one of my best baking tips for easy clean up – place a sheet of parchment (or a silicone mat if you don't like the waste) under your cookie rack to catch the icing drips. I won't judge you if you try and lick it clean…the icing is just that good.

Ingredient List
  • Cookies:
  • 1 Box Pillsbury Devils Food Cake Mix
  • 1/2 cup softened unsalted butter
  • 1 tablespoon flour
  • 2 eggs
  • Icing:
  • 1 cup sifted powdered sugar
  • 1/2 teaspoon vanilla
  • 2 1/2 tablespoons milk
  • 2 tablespoons Cocoa Powder
  • Topping:
  • 1/4 cup Crushed Candy Canes or 1/2 Teaspoon of peppermint oil
Directions
  1. Preheat oven to 350 degrees.
  2. Mix together all the cookie ingredients.
  3. Roll into 1� balls and place on a cookie sheet.
  4. Put into the oven for 10-15 minutes.
  5. Take out and let cool for about 5 minutes then transfer to a wire cooling wrack placed over a piece of parchment paper.
  6. Let the cookies cool and make your icing.
  7. If you choose to use peppermint oil them mix it in with the icing.
  8. Spoon icing over the tops of the cookies then sprinkle on the peppermint.
  9. Let the icing fully dry then package your Chocolate Peppermint Cake Cookies however you wish!
