I love eggs for breakfast and don’t always have time to cook them. I have bought frozen breakfast diet quesadillas for a fortune and decided to try my own. I made these YUMMY breakfast burritos with sausage, eggs, potatoes, veggies and cheese. They were really quick to make and I had a dozen in the freezer ready to grab when I needed to get out the door quick. You will have to forgive me the quality of the pics, I was one handed and using my iPhone. My son broke my camera on vacation so it is in the shop!
12 Whole Grain Tortillas Medium sized
8 eggs
1 cup of shredded cheese (I used Mexican Blend)
1 Package of Simply Potatoes Steakhouse Seasoned Diced Potatoes
Optional add ins:
Chopped Bacon
Crumbled Sausage (I happened a package of Jimmy Dean precooked sausage crumbles on hand which I just tossed in)
Diced Tomatoes
Vadalia Onion
Green Onions
Red Onion
Jalapeno
Green Pepper
Spinach
First I browned my potatoes, per the instructions on the package along with some onion. I threw this into a bowl with some sausage crumbles, cheese and tomatoes. Next I scrambled my eggs and mixed it into the potato mixture. Lay your tortilla flat and put a scoopful into the tortilla. Fold in the sides as seen below.
Holding in your folded sided pull up the bottom and tuck in in under the eggs. It is important to tuck before you roll so that your breakfast burritos will stay together.
Once they are rolled wrap them tightly in plastic wrap, put them on a cookie sheet and place the cookie sheet into the freezer. Once Frozen I put them all in a Ziploc freezer bag. If you don’t have freezer space for a cookie sheet just place them into your freezer bags and place in your freezer.
When you are in a hurry just pop one in the microwave for 2 minutes still in the plastic wrap. Take it out and remove the plastic wrap, it will be a little wet from the moisture, just put it back into the microwave for 30 seconds and it will be perfect.
