1 lb Ground Beef or Turkey
1 diced onion
1 diced green pepper ( I use frozen on this and the onion for ease about 1/2 bag each)
1 can Rotel Tomatoes Original or Hot
1 can diced tomatoes
2 cans Lucks Chili Beans regular or Hot
1 box Carrol Shelby’s Chili Kit
1 can or bottle of your favorite beer
1 Poblano Pepper
Take the pablano pepper and put it under the broiler to roast or if you have a gas stove like me you can hold it over the flame with a pair of tongs till it turns black. Put it into a paper or Ziploc bag while you do the rest.
Ground the beef in the bottom of a stock pot or dutch oven. Add in the onion and green pepper and saute till soft. If you have a lot of grease or water from frozen veggies you will want to drain that off.
Now dump in your cans of tomatoes and beans. Then in goes all the bags of seasoning in the Chili Kit ( I only use 1/2 the salt and don’t be afraid of the cayenne if you go less hot on the other stuff your chili will not be hot from the seasoning) Then the best part, add in a can or bottle of your favorite beer.
Stir it together and bring to a boil. While you are waiting for it to boil get the pablano out of the bag and scrape all the black skin off ( if there is some on there still it will be fine just get the majority off), dice the pablano omitting the seeds. Throw that in and stir. Once you come to a boil quickly put it on to simmer so you don’t burn it and cook for about 20 minutes at minimum.
When you serve it you can put these optional toppings on it: Frito’s, Sour Cream, Red or Green Onion, Shredded Cheese ( I use Mild Cheddar or Mexican blend), or cilantro
Now for some of my favorite soups from others:
( I omit the raw corn tortillas and just use fried. After frying I sprinkle on some of the spice mixture. I used the olive oil from the bottom of the chicken pan to saute the veggies in)
