It’s almost St. Patty’s day! I want you to have something easy to make with and for your kids so here is my recipe for Pot Of Gold Rainbow Crunch. When trying to come up with a fun snack for the boys and I called my friend Mary, who is a great preschool teacher! I wanted to do something like a popcorn and M&M mix and she said how about something golden. So I went on a search and discovered something called marshmallow caramel. I went through several recipes and how to’s and compared them with how to make regular caramel and this is my version.
1 stick or 1/2 cup Unsalted Butter
1 cup Brown Sugar
3 tablespoons Light Karo Syrup
1/4 teaspoon Vanilla
2 1/4 cups small Kraft Marshmallows
1 package Sea Salt Popcorn from Pop Secret
1/4-1/2 cup Regular M&M’s candies.
First pop your popcorn, make sure to get any un-popped kernels out and then try to not eat it because this sea salt popcorn is just that good!
Put butter, brown sugar, light Karo syrup, and Vanilla in a microwavable bowl. Put in the microwave for 1 minute. (the butter may not be all melted but that is OK)
Stir and put in marshmallows. Microwave for 1.5 minutes and stir. Microwave for 1 minute more. Take this out and stir, if all of the marshmallows are not melted yet trust me keep stirring and they will quickly. Here is what it should look like, pretty and glossy, go ahead dip your finger in there an take a taste, just be careful not to burn it!
