Buffalo Chicken Quesadillas





Earlier this week I made Buffalo Chicken in the Crock-pot. I had some leftovers so I decided to make quesadillas with it. I took 2 whole wheat tortillas and spread some of the chicken mix on one.

Crockpot Buffalo Chicken

One of my girlfriends was telling me about her buffalo chicken sandwiches she makes in her crock-pot. I love using my crock-pot but I am a bit of a snob about what I cook in it. She forwarded me this recipe and I searched around and found this one as well from Chef in Training.
And this is what I did:



I took out my crockpot and put in one of my favorite slowcooker liners from Reynolds.

This Week from Pinterest

This past week I was working on a fundraiser festival at my son's school. It was a silent auction, jumpies, dunk tank, ending in a movie night which our students voted on. We were slated for thunder showers yesterday and worried all day. Believe it or not thanks to our wonderful God, the first drop fell right at the end of clean up. It was a wonderful time! Some of our great teachers and our principal went in the dunk tank and Alvin and the Chipmunks Chipwrecked was the movie of choice.




Today I feel like I was run over by a MAC truck. I woke up this morning with a cold which my hubby had. Garrett has it too. Last night Mattie started throwing up which he did all over me this morning. Now Hubby is throwing up. Fun Fun, no rest for the weary!

So while I am sitting here I am playing on Pinetrest and decided to go through my Recipes I want to try board.

Sensory Integration and Fine Motor Skills

Sensory Integration Disorder also Called Sensory Perception Disorder (SPD) is often detected by a lack of fine motor skills. First lets learn what SPD is. 


This is an explanation from the SPD Foundation:

Sensory processing (sometimes called "sensory integration" or SI) is a term that refers to the way the nervous system receives messages from the senses and turns them into appropriate motor and behavioral responses. Whether you are biting into a hamburger, riding a bicycle, or reading a book, your successful completion of the activity requires processing sensation or "sensory integration."
Sensory Processing Disorder (SPD, formerly known as "sensory integration dysfunction") is a condition that exists when sensory signals don't get organized into appropriate responses. Pioneering occupational therapist and neuroscientist A. Jean Ayres, PhD, likened SPD to a neurological "traffic jam" that prevents certain parts of the brain from receiving the information needed to interpret sensory information correctly. A person with SPD finds it difficult to process and act upon information received through the senses, which creates challenges in performing countless everyday tasks. Motor clumsiness, behavioral problems, anxiety, depression, school failure, and other impacts may result if the disorder is not treated effectively.
One study (Ahn, Miller, Milberger, McIntosh, 2004) shows that at least 1 in 20 children’s daily lives is affected by SPD. Another research study by the Sensory Processing Disorder Scientific Work Group (Ben-Sasson, Carter, Briggs-Gowen, 2009) suggests that 1 in every 6 children experiences sensory symptoms that may be significant enough to affect aspects of everyday life functions. Symptoms of Sensory Processing Disorder, like those of most disorders, occur within a broad spectrum of severity. While most of us have occasional difficulties processing sensory information, for children and adults with SPD, these difficulties are chronic, and they disrupt everyday life.

Now let's take a look at what this looks like:
Sensory Processing Disorder can affect people in only one sense–for example, just touch or just sight or just movement–or in multiple senses. One person with SPD may over-respond to sensation and find clothing, physical contact, light, sound, food, or other sensory input to be unbearable. Another might under-respond and show little or no reaction to stimulation, even pain or extreme hot and cold. In children whose sensory processing of messages from the muscles and joints is impaired, posture and motor skills can be affected. These are the "floppy babies" who worry new parents and the kids who get called "klutz" and "spaz" on the playground. Still other children exhibit an appetite for sensation that is in perpetual overdrive. These kids often are misdiagnosed - and inappropriately medicated - for ADHD.

Garrett has SPD, a few of his symptoms were covering his ears at loud noises, really Bad handwriting, bumping into people and things, Drooling beyond his teeth coming in as a baby, inability to cut with scissors well, not choosing a hand to dominate by kindergarten.
Some of this Occupational Therapy was on improving his fine motor skills. It is about strengthening the hand arm and shoulder and many of these activities can be fun, here is a wonderful list from Hands On As We Grow it is wonderful and there is something for everyone.
