Fish Friday Po Boy's

My hubby and I love NOLA (that's New Orleans Louisiana for those of you not from the south)
Hubby's favorite place is ACME Oyster House. He took me there and I began my love affair with the Po Boy. So for Lent Hubby and I decided to try it! It was awesome!

So first, take 1 lb. shrimp and marinate it in beer and hot sauce (use a lot more than you think)
Then you coat it in 1 1/2 cups each flour and corn meal with salt, pepper and cyan to taste


Then you heat your oil and fry those babies!

Why I drug my child, Top 5 Supplements for ADHD

Many of us with ADHD or children with ADHD are always looking for alternatives. I am not saying alternatives to medicine because I am a big proponent of Meds. Just something in addition to.


Why you ask would I want to drug up my child?


My child has a neurological problem, it's not a behavioral problem. It is something he cannot control. If my child had cancer I would give him Chemo, Diabetes - Insulin.  ADHD is not a label it is a diagnosis.

Another Bread Fail

I long to make homemade bread, you know the kind that looks like this


 

Chewy on the outside, soft and warm on the inside...
I have tried and tried, I think I must be missing the bread making gene.

I decided with the spring weather we are having I would try making homemade hamburger buns from this recipe that should come out looking like this

Juice, Smoothies, and Frozen Bananas















Have you seen this floating around on Pintrest?

I keep hearing about juicing, I even bought one on sale with my 20% off coupon at Bed Bath & Beyond when Hubby was sick, thinking I would juice for him to help improve his energy. (Yea... that never happened sorry Honey)
Anyone that knows the boys in my family knows it's an act of God to get them to eat Veggies. So I gave this a try, my Sister thought I was nuts.

Crockpot Shredded Beef Tacos

This is one of the easiest recipes I have ever made and one of our favorites. I found it in a magazine once  and I know it by heart you will see why soon. I am sorry I could not find the original in my files to give credit.



Ingredients:

1 Chuck Roast
2 Jars of Salsa your choice ( I use Pace and like to do one green and one red)
2 Heaping tablespoon Chili Powder ( you can add more if you like it spicy)

Movie Character Soap

So many of you have looked at my post on Crockpot Lotion Bars it amazes me. I love reading all your comments and I got a lot of great ones on making soap but am still afraid of the Lye thing. So I did some searching and went to my local craft store and found "cold soap making". It's so cool.


I bought Olive Oil soap base, Bergamot Essential Oil (Good for my psoriasis they say), Tee Tree Oil ( a natural astringent) and Shea Butter. I made some for me and the boys and it was so easy!




First the Boys:
Olive Oil Soap Base
Shakes of both Essential Oils


I went to the toy room and grabbed some movie characters! and put them in the soap tray mold





Then I cut the soap base "it cuts like butta!"

Fish Friday........



So today is Fish Friday and I am behind the 8 ball. It was a teacher work day and I took the kids to the Yellow River Game Ranch close to our house. It is full of very docile rescue animals. We went with our wonderful sweet friends the Mengs. Susan and Paul are 2 of the most laid back, humble,  and godly people I have ever met. There son Charlie is Garrett's age and would rather be running around playing then be in front of a TV all day playing video games like Garrett, he enjoys life and appreciates the simple things.

Windows as Art

So a few weeks ago I was coming home and noticed my neighbors getting new windows


Aren't they pretty? (gotta love the above ground power lines in the way)

So I went over and asked the guys what they were gonna do with the old windows and you will not believe they said, "Take them to the dump!"
Don't they know how many crafters would love to have all those? 

I asked for 4, 3 of the regular ones and that arched beauty hanging over the front door!

Cucumber Salad


Spring is here and I was feeling like something light so I dug through my fridge drawers and put together one of my favorite salads. It is crisp and refreshing and EASY! 
It goes with any protein for a side dish.


Recipe:
2 Tomatoes
2 Cucumber pealed sliced in 1/2 long ways and then chopped
1/2 Red Onion sliced
Kraft Light Italian Dressing


Mix all the veggies together and then squeeze on the dressing to preference I used about 1/4 cup. Toss and enjoy.

Pimp Your Mixer!

Tommorow we will be having a Stewardship Event at my son's school. Garrett, I and about 150 others will be making up to 1000 PBJ's to feed the homeless at St. Luke's Kitchen in downtown Atlanta. The are very specific on how this has to be done, you have to use Jam, not Jelly, as it will not soak through the bread. You have to mix the PB and Jam in a mixer first before you spread it on the bread. It then must be put in baggies and put BACK in the original Loaf Bag which helps it to keep it's shape. Learn something new everyday! 


Since I have to take my Kitchen-aid to mix I decided to 

PIMP IT OUT!

It's Fish Friday! Salsa Verde Talapia

At New Years we spent time with some of our Best Friends Julie and Jorge. While cooking my Baked Fontina I mentioned that I needed some good fish recipes. She rattled off this one and it was so easy to remember I didn't have to write it down...which is amazing these days because I seem to forget EVERYTHING!

So here are the ingredients:


Yea I know your saying, "Wow how labor intensive"

Spray a baking pan or sheet with non stick spray or olive oil. lay the Talapia in the dish and then sprinkle Old Bay over the fish, not to heavy but not to light either.

Fancy Chore Chart

So as you may or may not know punkin head (Garrett) has ADHD. Trying to get him to just do the daily stuff is constant reminders (even with meds) A few weeks ago we developed a system that will finally work for both of us....really trying to get an ADHD mom to be diligent to an ADHD kid...not gonna happen...


Any hoo, I had to streamline the system so we could both keep up, so we put together a list of chores and assigned a compensation amount to each chore. We first wrote it out on a piece of paper and got a good ol fashion Ball Jar to put his money in, for those of you not from the south that don't know what a ball Jar is

Subway Kids Meal Bag Recycle

So my boys think that the floor of my car is there trash can. I should have taken pics of the nastiness but since I am a baby blogger I didn't think of that before I vacuumed it out yesterday. Lets just say that there were pop tart corners for weeks shoved in the pocket in the back of the car seat. 
I have tried a real trashcan in the back but if anyone rides the hump that doesn't work, I have tried stuff from the store but that didn't work. I went to look at the bags that hang on the back of your car seat and at $12-$15 and I need 2 I have put it off.
The other day we went to Subway for lunch and got 2 kids meals and they where given to us in this

Fundraising and Volunteers

I love marketing and fundraising. I co-chair our churches Fall Festival every year and now am working with the development committee at my son's school St. John Neumann Regional Catholic School. We are always looking for great fundraising or family night ideas. In November we had a great family movie night and sold pre-ordered pizza, popcorn, drinks, hot chocolate, candy, and finger lights. We showed Cars 2 on a 26 foot blow up movie screen. We are having another this April where we will show another recent release. I love this idea from Pintrest to Decorate you put a glow stick in balloon to make it glow in the dark:

25 Things

1. I never was an emotional person until I thought my husband might die.
2.  I love Chardonnay, wine is my friend and I don't care who doesn't like it
3. I have never been formally diagnosed with ADHD but punkin head has and everything they say about him was what they said about me as a child, the more I learn the more the puzzle pieces fall into place
4. My biggest fear for punkin head is that some teacher with no patience will crush his sweet spirit
5.  I love to sit by myself with no one in the house watch a chick flick, drink wine, and eat pizza... it is my favorite thing to do
6. My Favorite color is red, I love it... it's sassy, hot, and bold
7. I used to smoke and I miss it, I liked to smoke but know I cannot because it is bad for me.
8. I often wonder if it is ever possible to have a day where you do what you want and enjoy it without having to worry about all the crap you need to do or clean?
9. When you are talking to me very often my mind is 10 steps ahead of you and I have no idea what you just said but I act like I do.
10. I never liked Diet Coke until I turned 41, I was a total Coke Classic devote, now Diet Coke is all I will drink... taste changes as you get old but I will never be a Pepsi drinker.
11. I used to cry as a teen about how flat my chest was, I was made fun of and people were mean about it....now I'm a 38G (and no I didn't have surgery) Be careful what you wish for you might get it is no joke.
12. At 42 I still don't feel grown up and feel like there is a ton I still have to learn
13. I snore like there is no tommorow but don't have sleep apnea, my poor hubby

Fish Friday Greek Roasted Talapia



This is a recipe from my friend Diana Thomas, her husband calls her Dizzy.


(This was us at Halloween right after Matthew was born)

She and I have both been trying off and on for the past few years to lose weight and get healthy. Unfortunately our wine habit and our kids have not made that easy! You know about mine, she has 5 and has had more on her plate in the past 2 years than most people in a life time. I love her dearly and have a lot of respect for how she deals with all that is on her plate.

This is one of my favorite fish recipes ever and I serve it with brown rice but you could use pasta as well. Everyone I make it for loves it. (except my kids because they are picky as sh#t) The best part it is healthy and low fat!


First you need to take your Roma tomatoes, seed and chop them

Crockpot Lotion Bars

I have been seeing these lotion bars for a while now and am very intrigued. All the recipes asked to melt the flammable beeswax in a double broiler. Ever since I tried to make haystacks in my 20's and exploded a double broiler and butter scotch chips all over my mothers ceiling I have not been a fan of them.


So I thought lets just try the CROCKPOT!
