Black Bean Avocado Salad

The Sunday before the 4th the in-laws had everyone over for burgers and hot dogs. Nana asked me to bring a salad and I wanted something with black beans and this is what I came up with.




Black Bean and Avocado Salad

Ingredients:
1-2 heads of Romaine Lettuce
1 Can of Low Sodium Black Beans drained and washed
3/4 of 1 Red, Orange, or Yellow Pepper diced
1/4 cup Red Onion Diced
3/4 of a package of grape tomatoes cut in half
Cilantro
1 teaspoon of cumin
salt & pepper
3 limes
2 Avocados

First you take the romaine roll it us and slice into thin ribbons like you do basil, Throw in a bowl with your drained and rinsed black beans, bell pepper, onion, and tomatoes. Then dice up your avocado and squeeze the juice of one of your limes over it, this will keep it from browning to fast. Then take about 3 tablespoons of chopped cilantro, the juice of 2 limes, cumin and S&P to taste and mix in a separate bowl. Pour the dressing over the salad and you are done!

After dinner we went outside for sparklers and pop-it's. So that the kids would be less afraid of the sparklers we put small holes in plastic cups and put the handle through so the kids would not get burned.



Nana always has the decorations out for any holiday!



Here's my niece Anna all decked out in her blue with white polka dot's for the 4th, she's growing fast!

  8. That looks delish! I also make a black bean salad with black beans, mangos, and red and orange peppers, red onion and Italian dressing. It is SO SO good and can be made in advance and still be great!
