New Years Eve Cheezy Heaven

Happy New Year 2012 everyone! May you be blessed this next year!
So yesterday my hubby and I were lucky enough to have my parents call and offer to take the kids for the night! Yippeeeee!
We had already made plans to go have dinner and spend the night at another couples house so now we got to do it without kids! Happy New Year to me!
They asked me to bring an appetizer so I got online and found THIS!!!!!!!!! Well actually I found the book pic and this below is the one I made!
Baked Fontina

Turns out I actually owned the cookbook....imagine that... let me explain,  one of my friends calls me a cookbook whore because I have never met one I didn't want to buy!


  • Recipe
  • 1 1/2 pounds Italian Fontina cheese, rind removed and 1-inch-diced
  • 1/4 cup good olive oil
  • 6 garlic cloves, thinly sliced
  • 1 tablespoon minced fresh thyme leaves
  • 1 teaspoon minced fresh rosemary leaves
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 crusty French baguette

Directions

Preheat the broiler and position the oven rack 5 inches from the heat.
Distribute the cubes of Fontina evenly in a 12-inch cast-iron pan. Drizzle on the olive oil. Combine the garlic, thyme, and rosemary and sprinkle it over the cheese and olive oil. Sprinkle with the salt and pepper and place the pan under the broiler for 6 minutes, until the cheese is melted and bubbling and starts to brown.
Serve the baked Fontina family-style-right out of the oven in the cast-iron pan with crusty chunks of bread for everyone to dip.
So it took mere minutes to make and only 6 minutes under the broiler. The smell of cheesy garlic was unbelievable and can I just say I felt a little closer to God eating this, they must serve this in heaven. Actually I compared it out loud with my lack of filtering to be as good as an "O".





Our friends Julie and Spin are wonderful and we are so lucky to have them in our lives. Spin and my husband have definitely developed a bromance. Soon I will be sharing the spaghetti sauce we had for dinner along with the FRESH pasta my hubby made with his new pasta machine!
